· 1/2 cup white vinegar
· 1/2 cup sugar
· 1 teaspoon salt
· 1/4 teaspoon white pepper
Directions
1. Cook green beans until tender.
2. Drain canned beans and rinse.
3. Toss beans with onion and pepper.
4. Combine the oil with remaining ingredients and pour over the beans.
5. Chill for at least 4 hours before serving. Flavor improves with marinating overnight or longer.
Winter-Fruit Salad
Ingredients
· 600 grams of high-quality dried fruits (pears, cranberries, figs, apricots)
· 700 milliliters of cold water
· 1 vanilla pod
· 1 tablespoon fresh lemon juice
· 1 Earl Grey teabag
· Mascarpone cheese or Greek yogurt
· 3 tablespoons clear organic honey
Directions
1. Place the dried fruits into a large saucepan and pour water over them. Add honey.
2. Split the vanilla pod, scrape the seeds, and place them in the pod. Add to the mixture.
3. Bring to a boil, then simmer for about 10 minutes until a syrup-like texture forms.
4. Remove from heat, add the tea bag, and let it infuse for 10 minutes.
5. Remove the tea bag and vanilla pod, add lemon juice, stir well, and let it cool.
6. Cover and chill until ready to serve. Flavor improves over time; can be prepared in advance.
Chicken, Sweet Apple & Fennel Salad

Ingredients
· 1 regular country-style roast chicken
· 1 large bulb fennel, trimmed, thinly sliced
· 2 pink lady apples, thinly sliced
· 1/3 cup fresh lemon juice
· 1 small red onion, thinly sliced
· 1 cup fresh parsley leaves
· 1/2 cup pecans, toasted, chopped
· 1/2 cup whole egg mayonnaise
· 1 tablespoon maple syrup (optional)
· Sea salt and freshly ground black pepper
Directions
1. Remove skin from chicken, shred meat, and discard skin and bones.
2. Place fennel and apple in a large serving bowl, toss with lemon juice.
3. Add chicken, onion, parsley, and pecans; toss to combine.

· 2 tablespoons chopped fresh basil
· 1/2 teaspoon salt
· 1/2 teaspoon ground black pepper
· 2 tablespoons white balsamic vinegar
· 1 1/2 tablespoons honey
· 3/4 teaspoon Dijon mustard
· 1/4 teaspoon minced garlic
· 1/8 teaspoon pepper
· 1 1/2 teaspoons chopped fresh basil
· 1/4 cup canola oil
· 1/4 cup extra-virgin olive oil
Directions
1. Find wild rice and orzo pasta at Carrefour stores in Uganda.
2. Bring wild rice and water to a boil, simmer until tender, drain, and refrigerate.
3. Cook orzo pasta, drain, rinse, and chill.
4. Combine rice, orzo, onion, currants, corn, bell peppers, basil, salt, and pepper.
